In the Dairy Viv has been creating an exciting range of seasonal ice creams and sorbets. They are made from milk and cream produced on the Estate and contain no additives or preservatives. Viv will shortly be holding a series of tastings when customers will have the opportunity to meet Viv and taste the latest seasonal offerings.

The most popular ice creams have been vanilla, coffee, and chocolate. Her mango sorbet also has a strong following amongst those who have tasted it. A selection of ice creams and sorbets are always available from the Conservatory Barn Cafe.

Dudley will be developing a range of five or six cows milk cheeses and a soft one is already well advanced. A 12 month mature cheddar is also planned as well as some butter – the resultant whey will then be used in the kitchen or could conceivably be turned into a ricotta type cheese.

His mould ripened soft cheese should be available in mid-October, and he is currently experimenting with a number of different flavours for his fresh lactic soft cheese.
